C\u00e1c \u03b2-glucan l\u00e0 ch\u1ea5t x\u01a1 h\u00f2a tan, c\u00f3 k\u00edch th\u01b0\u1edbc ph\u00e2n t\u1eed l\u1edbn v\u00e0 th\u01b0\u1eddng kh\u00f4ng \u0111\u01b0\u1ee3c h\u1ea5p thu v\u00e0o c\u01a1 th\u1ec3 b\u1edfi h\u1ec7 th\u1ed1ng ti\u00eau h\u00f3a. Tuy nhi\u00ean, ng\u01b0\u1eddi ta \u0111\u00e3 quan s\u00e1t th\u1ea5y m\u1ed9t s\u1ed1 \u03b2-glucan d\u00f9ng \u0111\u01b0\u1eddng u\u1ed1ng \u0111\u01b0\u1ee3c h\u1ea5p th\u1ee5 qua \u0111\u01b0\u1eddng ru\u1ed9t \u0111\u1ebfn m\u00e1u ngo\u1ea1i vi v\u00e0 c\u00f3 s\u1ef1 gia t\u0103ng \u0111\u00e1ng k\u1ec3 n\u1ed3ng \u0111\u1ed9 \u03b2-glucan trong m\u00e1u \u1edf nh\u00f3m \u0111\u01b0\u1ee3c \u0111i\u1ec1u tr\u1ecb (u\u1ed1ng \u03b2-glucan) so v\u1edbi nh\u00f3m kh\u00f4ng \u0111\u01b0\u1ee3c \u0111i\u1ec1u tr\u1ecb (Hino et al., 2020). \u0110i\u1ec1u n\u00e0y cho ph\u00e9p l\u00fd gi\u1ea3i v\u00ec sao vi\u1ec7c s\u1eed d\u1ee5ng \u03b2-glucan l\u1ea1i c\u00f3 vai tr\u00f2 k\u00edch th\u00edch h\u1ec7 th\u1ed1ng mi\u1ec5n d\u1ecbch c\u1ee7a c\u01a1 th\u1ec3. \u03b2-Glucan (beta-glucan) l\u00e0 m\u1ed9t chu\u1ed7i polyme c\u1ee7a c\u00e1c \u0111\u01a1n ph\u00e2n t\u1eed D-glucose g\u1eafn v\u1edbi nhau b\u1eb1ng li\u00ean k\u1ebft \u03b2-glycoside.
